Ingredients

  • 4 russet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup diced ham
  • 1 cup heavy cream
  • salt and pepper, to taste

Instructions

  1. In a large pot, sauté onions and garlic until tender.

  2. Add potatoes and chicken broth; bring to a boil and simmer until the potatoes are soft.

  3. Using an immersion blender, blend the soup until smooth.

  4. Stir in diced ham and heavy cream.

  5. Season with salt and pepper to taste.
