A delicious savory stir-fry that combines the richness of ground pork with the tender texture of eggplant.

Ingredients

  • 1 pound ground pork
  • 1 large eggplant, sliced into 1-inch pieces
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 3 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/4 cup water

Instructions

  1. Heat the oil in a wok or large skillet over high heat.
  2. Add the garlic and ginger and stir-fry for 30 seconds.
  3. Add the ground pork and cook until it is browned.
  4. Add the eggplant and stir-fry for 2 minutes.
  5. Add the soy sauce, oyster sauce, sugar and water and stir-fry for 5 minutes.
  6. Serve hot with rice.
