How To Make Ground Pork and Eggplant Stir-Fry Recipe

Ingredients
- 1 pound ground pork
- 1 large eggplant, sliced into 1-inch pieces
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 3 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/4 cup water
Instructions
- Heat the oil in a wok or large skillet over high heat.
- Add the garlic and ginger and stir-fry for 30 seconds.
- Add the ground pork and cook until it is browned.
- Add the eggplant and stir-fry for 2 minutes.
- Add the soy sauce, oyster sauce, sugar and water and stir-fry for 5 minutes.
- Serve hot with rice.
