How To Make Sausage Pancake Muffins
Two breakfast classics come together in this pancake muffins recipe. Fluffy pancakes are baked muffin-style with sausage bits for a portable breakfast.

- 1lbpork sausage
- 2cupsflour
- ¼cupsugar
- 1tbspbaking powder
- 1tspsalt
- ½tspground cinnamon
- ¼tspground nutmeg
- 1large egg,room temperature
- 2cupsmilk
- 2tbspcanola oil
- 2tbsphoney
Instructions

Preheat oven to 350 degrees F. Coat two muffin tins with baking spray.

In a medium pot over medium heat, cook and crumble sausage for 6 to 8 minutes until no longer pink. Remove from heat and set aside.

In a mixing bowl, mix together flour, sugar, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, whisk egg, milk, oil and honey until blended. Gently mix wet ingredients into dry ingredients until just combined. Fold in sausage crumbles.

Pour batter into the prepared muffin tin and bake 20 to 25 minutes until lightly browned.
