Ingredients
Grilled pear salsa:
- 2 large pear, sliced into ½-inch-thick slices
- 1 tbsp canola oil
- ¼ cup small red onions, diced
- 1 tsp garlic, chopped
- 1 small jalapeno, diced
- 1 tbsp fresh oregano, chopped
- 1 tbsp lemon juice
- salt
- black pepper, freshly ground
Quesadilla:
- 1½ cups cooked chicken meat, shredded
- 6 flour tortillas, 6-inch
- ¼ cup scallions, sliced
- ¾ cup Gruyere, shredded
- salt
- black pepper, freshly ground
- 2 tbsp butter, melted
- ¼ cup crème fraiche
Instructions
To make the salsa:
- Core and remove seeds from pears
- Place the pears on a hot grill or grill pan and grill for 3 minutes per side. Remove from grill and let cool.
- Chop grilled pears into small pieces and place them in a small bowl. Add in red onions, garlic, jalapeno, oregano, and lemon juice. Mix well. Season with salt and pepper.
- Refrigerate for 30 minutes before serving.
To make the quesadillas:
- Preheat the oven to 350 degrees F.
- Mix the shredded chicken, green onions, and gruyere together. season with salt and pepper. Place in oven until cheese is melted.
