
How To Make Black Bean and Avocado Breakfast Burritos
Dieting doesn’t mean you have to starve yourself. Try these breakfast burritos with a strong, fermented taste from the black beans balanced with avocados.

Ingredients
For Breakfast Burrito:
- 2smalltortillas
- 4eggs,scrambled
- 1avocado,diced or sliced
- ¼cupcheddar cheese,shredded
- seasoned black beans,recipe below
- salsa,optional
For Black Beans:
- 2tspolive oil
- ¼cupred onion,chopped
- ¼cupred bell pepper,diced, optional
- 1clovegarlic,minced
- 15ozcan black beans
- ½tspchili powder
- ½tsporegano
- ¼tspcumin
- ¼cupfresh cilantro,chopped
- juice of half a lime
- salt and pepper
Instructions

Lay the tortillas flat on a serving dish. Layer scrambled eggs, cheese, avocado and black beans down the center of the tortillas, then roll to close. Serve warm.

Heat oil in a saucepan over medium-high heat. Add the onion and bell pepper and saute for 5 minutes until the onion is soft and translucent.

Add garlic and cook for an additional minute.

Then add the black beans, chili powder, oregano, and cumin, and stir to combine. Bring to a simmer, then reduce heat to medium-low and let cook for an additional 5 minutes.

Remove from heat and stir in fresh cilantro and lime juice, then season with a generous pinch of salt and pepper.
