Serves:

Ingredients

  • 1 cup dried brown lentils, rinsed and drained
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large pot, heat olive oil over medium-high heat.

  2. Add onion, carrots, celery, and garlic. Cook for 5-7 minutes or until vegetables are tender.

  3. Add cumin, coriander, smoked paprika, lentils, vegetable broth, diced tomatoes, salt, and pepper.

  4. Bring to a boil.

  5. Reduce heat to low and cook covered for 40-45 minutes or until lentils are tender.

  6. Serve hot and garnish with fresh parsley if desired.
