How To Make Lentil Soup Recipe
A hearty and healthy soup made with lentils, vegetables, and spices.
Serves:
Ingredients
- 1 cup dried brown lentils, rinsed and drained
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (optional)
Instructions

In a large pot, heat olive oil over medium-high heat.

Add onion, carrots, celery, and garlic. Cook for 5-7 minutes or until vegetables are tender.

Add cumin, coriander, smoked paprika, lentils, vegetable broth, diced tomatoes, salt, and pepper.

Bring to a boil.

Reduce heat to low and cook covered for 40-45 minutes or until lentils are tender.

Serve hot and garnish with fresh parsley if desired.
