How To Make Lentil Curry Recipe
A hearty and comforting vegetarian dish made with lentils in a flavorful curry sauce.
Serves:
Ingredients
- 1 cup dried brown lentils, rinsed and drained
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 (14 oz) can diced tomatoes
- 2 cups vegetable broth
- 1/4 cup chopped fresh cilantro
Instructions

In a large saucepan, heat the oil over medium heat. Add the onion and cook for 5 minutes, or until softened.

Add the garlic and ginger and cook for another minute.

Stir in the cumin, coriander, turmeric, cayenne pepper, and salt and cook for 2 minutes.

Add the lentils, tomatoes, and vegetable broth and bring to a boil.

Reduce the heat and simmer for 30 minutes, or until the lentils are tender and the sauce is thickened.

Stir in the cilantro and serve over rice or with naan bread.
