If you want more meatless meals, then these lentil bowls are for you. Lentils are served with tomatoes, avocados, and eggs then topped with hot sauce.

Ingredients

  • cupslentils,cooked
  • squeeze of lime
  • kosher salt and black pepper,to taste
  • 3large hard boiled eggs,peeled
  • 2ozavocado,sliced
  • ½cupgrape tomatoes,halved
  • cilantro,chopped
  • cholula hot sauce,a few dashes

Instructions

  1. Place ¾ cup lentils in a bowl, squeeze a little lime juice, salt and pepper over the top to taste and top with 3 egg halves, 1 ounce avocado, cilantro and finish with more salt and pepper.

  2. Finish with hot sauce and enjoy!
