How To Make Beet and Spinach Pasta Recipe

- 8 oz whole wheat spaghetti
- 2 beets, peeled and grated
- 2 cups spinach, chopped
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup grated Parmesan cheese
Instructions

Cook spaghetti according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add garlic and grated beets. Cook for 5-7 minutes, or until beets are tender.

Add cooked spaghetti to the skillet and toss to combine with the beet and spinach mixture.
