Ingredients

  • 2 medium-sized beets, cooked and sliced thin
  • 2 medium-sized avocados, sliced
  • 2 cups of mixed greens
  • 1/4 red onion, sliced thinly
  • 1/4 cup of walnuts, chopped roughly
  • 1/4 cup of crumbled feta cheese
  • Dressing:
  • 1/4 cup of olive oil
  • 1 tbsp of dijon mustard
  • 1/4 cup of apple cider vinegar
  • 1 tsp of honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, toss together the mixed greens, beets, avocado, red onion, and walnuts.

  2. In a small bowl, whisk together the olive oil, dijon mustard, apple cider vinegar, honey, salt, and pepper, until fully combined.

  3. Drizzle the dressing over the salad, tossing it gently.

  4. Top the salad with crumbled feta cheese.

  5. Serve immediately and enjoy!
