This flavorful and Homemade Sweet and Sour Chicken is filled with seasoned chicken tenderloin, sweet pineapple chunks, tender carrots, and fried pickles. An undoubtedly easy sweet and sour chicken recipe overflowing in texture and complex flavors!

Ingredients

  • 2 tbsp vegetable oil
  • 20 oz La Choy sweet and sour sauce, (2 jars)
  • 4 tbsp cornstarch
  • salt, to taste
  • black pepper, to taste
  • 30 oz pineapple chunks, (2 cans)
  • 1 cup pickles, sliced
  • 1 cup baby carrots, steamed
  • 1 cup Edamame
  • 2 onion, small and sliced
  • 2 lb chicken tenderloin, or breast, cut in chunks

Instructions

  1. In a bowl, sprinkle the chicken chunks with cornstarch, salt, and pepper. Set aside.

  2. Heat the oil on a non-stick skillet over medium heat.

  3. Throw in the chicken and onions into the pan. Stir fry until golden.

  4. Add the sweet and sour sauce, pineapple chunks, pickles, carrots, and edamame.

  5. Stir and cook for 5 minutes until the chicken is cooked through.

  6. Serve over a bed of rice and enjoy a tasty dinner with your Homemade Sweet and Sour Chicken!
