How To Make Brussels Sprouts Stir Fry

These stir fried brussels sprouts makes a nutritious side to any meal! Each bite is packed with savory potatoes and red peppers sautéed in a savory broth.

  • 1tbspvegetable oil
  • 1onion,chopped
  • 1large potato,peeled, cubed
  • 1bay leaf
  • 1lbbrussels sprouts,trimmed, halved lengthwise
  • 1red pepper,seeded, cut into ½-inch cubes
  • ¼cupchicken broth
  • ground black pepper,to taste
  • 2tbspgreen onions,chopped


  1. Heat the vegetable oil in a skillet over medium heat.

  2. Stir in the onion, potato, and bay leaf. Cook and stir until the onion is transparent for about 5 minutes.

  3. Add the Brussels sprouts, red pepper, and chicken broth. Cover and cook for about 10 minutes until vegetables are tender.

  4. Remove the bay leaf. Toss with black pepper, to taste.

  5. Garnish with green onions, and serve immediately.
