How To Make Sausage and Pepper Stew
You can never go wrong with the classic pair of sausage and pepper for a yummy stew! Italian sausages and bell peppers are cooked in a tangy tomato sauce.

Ingredients
- ¾lbhot Italian sausage
- 1medium yellow onion
- 1medium green bell pepper
- 1medium red bell pepper
- 1½tspcoarse salt
- ¼tspblack pepper,freshly ground
- 1canwhole tomatoes
- ¼cupfresh flat-leaf parsley,loosely packed
Instructions

Remove casings from sausage; crumble into 1-inch pieces. Heat a large saute pan over medium heat. Add sausage; cook, stirring often, for about 8 minutes until browned and cooked through.

Remove sausage from saute pan with a slotted spoon; set aside.

Pour off all but 1 tablespoon of fat from the pan. Return to medium heat, and add onion. Saute onion for about 5 minutes until it is just beginning to brown and soften. Add peppers, and continue to cook for 10 minutes more.

Season with salt and pepper. Add tomatoes; bring to a boil, and then lower heat and simmer for about 12 minutes more until vegetables are tender and sauce has reduced and thickened slightly.

Return sausage to pan, and cook just enough to heat through. Stir in parsley, and adjust seasoning with salt and pepper.
