Tortilla Soup Recipe

A hearty soup with ground beef, two types of beans, corn and cheese! This is a great meal for those cold winter nights or to take to a pot luck dinner.


How To Make Tortilla Soup

A hearty soup dish ladled over crispy crushed tortillas and cheese. The soup is chunky in texture with the combination of chicken and beans.

Ingredients

  • 1 lb lean ground beef , or turkey
  • 1 small onion , diced
  • tbsp cayenne pepper
  • 2 tsp brown sugar
  • 1 pkg taco seasoning
  • 15 oz kidney beans
  • 15 oz pinto beans
  • 15 oz pork 'n beans
  • 24 oz tomato juice
  • tortilla chips, crushed

Optional garnish:

  • cheese, shredded
  • sour cream
  • jalapenos
  • green onion
  • Greek yogurt

Instructions

  1. Brown ground beef or turkey, drain and put in a crock pot.

  2. Dice one small onion and add to beef.

  3. Drain the cans of beans and add to crockpot.

  4. Add the cayenne pepper, brown sugar, taco seasoning, and tomato juice to crockpot and stir to incorporate all ingredients. Turn crockpot on low for 4 to 6 hours then serve with shredded cheese, sour cream, or Greek yogurt.

  5. Crush tortilla chips or taco shells and add to soup.

  6. Green onion or jalapenos make a great addition as well.
