Tomato Soup French Style Recipe

With fresh tomatoes it looks like a cream of tomato soup, but without those pesky fat calories.


A wonderful recipe for French-style tomato soup that is surely enough to please even the pickiest eaters! A silky and flavorful tomato base with a smooth finish. Add to that the incredible flavor from bacon and its rendered fat to accentuate every herb and seasoning in this tasty dish.

Ingredients

  • 4 bacon , sliced and diced
  • ½ cup onion, chopped
  • 12 fresh tomatoes
  • 1 small tomato paste
  • 3 lemon rind strips
  • 1 large carrot, sliced
  • 2 large chicken broth
  • 2 tsp white pepper
  • salt and pepper
  • ½ tsp thyme
  • 2 tsp basil
  • 4 tbsp parsley
  • parsley , garnish, chopped
  • basil, garnish, chopped
  • fried garlic croutons, garnish

Instructions

  1. Heat bacon in pan.
  2. When fat has run, add butter; melt. Add onions; cook gently 5 to 6 minutes, until tender and golden brown.
  3. Add tomatoes, tomato puree, lemon rind, stock, carrot, white pepper, salt, pepper, sugar and herbs; bring to a boil.
  4. Simmer for 20 minutes or until tomatoes are tender.
  5. Put through a processor or blend in a blender.
  6. Adjust seasoning.
  7. Serve hot; sprinkle with parsley and basil and croutons.
