How To Make Shrimp-Rice Soup

Clean and simple flavors are the highlight of this shrimp-rice soup. This seafood-based dish is made more refreshing with the addition of lime juice.

Ingredients

  • cupschicken stock
  • 1small onion
  • 1celery stalk
  • ¼cupbrown rice,uncooked
  • ½lbmedium shrimp
  • 1tbsplime zest,grated
  • 1lime juice
  • 1tspred pepper flakes,crushed
  • salt and pepper,to taste

Instructions

  1. Combine the stock, onion, celery, and rice in a 6-quart pot.

  2. Cover and bring to a boil.

  3. Reduce the heat and simmer for about 40 minutes until the rice is tender.

  4. Stir in the shrimp and simmer for about 5 minutes until they are pink and cooked through.

  5. Stir in the lime zest, lime juice, and pepper flakes.

  6. Taste and season with salt and black pepper if needed.
