How To Make Leftover Turkey Noodle Soup

This hearty turkey noodle soup is just what you need to keep you warm on cold nights! It’s also loaded with tender veggies for a fuller meal.

Serves:

Ingredients

  • 1tbspbutter
  • ½cuponion,chopped
  • ½cupcelery,sliced
  • 1cupcarrots,peeled and sliced
  • 1tspgarlic,minced
  • salt and pepper,to taste
  • ½tspdried thyme
  • 6cupschicken broth,or turkey broth
  • 3cupsturkey,cooked, chopped or shredded
  • 6ozdry egg noodles
  • 2tbspfresh parsley,chopped

Instructions

  1. Melt the butter in a large pot over medium high heat.

  2. Add the onion, celery and carrots, then season them with salt and pepper to taste.

  3. Cook for 4 to 6 minutes or until the vegetables are just softened.

  4. Add the garlic and cook for 30 seconds more.

  5. Add the thyme, broth and turkey to the pot, then bring to a simmer.

  6. Cook for 20 minutes or until the vegetables are tender.

  7. Add the noodles to the pot, then cook for the time that’s listed on the package.

  8. Stir in the parsley and add more salt and pepper to taste.

  9. Serve warm, and enjoy!
