  • 1tbspwhipped butter
  • cupswhite and pale green leeks,(3 large),halved lengthwise, sliced thin
  • ½cupIrish steel cut oats
  • 4cupsfat-free reduced sodium chicken broth,vegetarians use vegetable broth
  • cupsfat-free milk
  • Pepper,fresh cracked to taste
  • 2tbspfresh chives,for garnish


  1. Melt the butter in a medium saucepan over low heat; add the leeks.

  2. Cook, stirring occasionally for about 15 minutes until the leeks are soft.

  3. Add the broth and milk; raise heat to high and bring to a boil.

  4. Add the oatmeal and fresh cracked black pepper to taste.

  5. Return to a boil, stirring occasionally; reduce heat to low.

  6. Cover and simmer gently for 45 to 50 minutes (less if using Quaker oats) until oats are tender.
