How To Make Gingered Cabbage Soup with Pork and Potatoes

Ingredients
- 2tbspbutter
- 1onion
- 1tbspfresh ginger,minced
- ¾lbgreen cabbage,(about ¼ head)
- 1½qtchicken broth,or homemade stock, canned, low sodium
- 1lbpotatoes,(about 3), boiling
- 2tspsalt
- 1lbpork tenderloin
- 2tsplemon juice
- ¼cupfresh parsley,chopped
Instructions

In a large pot, melt the butter over moderately low heat. Add the onion and cook for about 3 minutes, stirring occasionally, until starting to soften.

Stir in the minced ginger and the cabbage and cook for 1 minute longer.

Add the broth, potatoes, smashed ginger, and 1 teaspoon of the salt.

Reduce the heat and simmer for about 10 minutes until the potatoes are tender.

Stir in the pork and the remaining 1 teaspoon salt. Cook for about 3 minutes until the pork is just done.

Stir in the lemon juice and parsley.

Remove the pieces of smashed ginger before serving
