Ingredients

  • 2tbspbutter
  • 1onion
  • 1tbspfresh ginger,minced
  • ¾lbgreen cabbage,(about ¼ head)
  • qtchicken broth,or homemade stock, canned, low sodium
  • 1lbpotatoes,(about 3), boiling
  • 2tspsalt
  • 1lbpork tenderloin
  • 2tsplemon juice
  • ¼cupfresh parsley,chopped

Instructions

  1. In a large pot, melt the butter over moderately low heat. Add the onion and cook for about 3 minutes, stirring occasionally, until starting to soften.

  2. Stir in the minced ginger and the cabbage and cook for 1 minute longer.

  3. Add the broth, potatoes, smashed ginger, and 1 teaspoon of the salt.

  4. Reduce the heat and simmer for about 10 minutes until the potatoes are tender.

  5. Stir in the pork and the remaining 1 teaspoon salt. Cook for about 3 minutes until the pork is just done.

  6. Stir in the lemon juice and parsley.

  7. Remove the pieces of smashed ginger before serving
