Ingredients

  • 2tspextra virgin olive oil
  • 2clovesgarlic,chopped
  • 2tbsponion,diced
  • 3cupsbroccoli
  • 8ozbaby spinach leaves
  • 2parsnips,peeled, cored, and chopped
  • 2celery ribs,trimmed and chopped
  • 1handful fresh parsley,roughly chopped
  • sea salt and freshly ground black pepper,to taste
  • 1tbsplime juice,or to taste
  • 2tbspdry lentils,or other plant-based protein
  • ½cupsweet potato,cooked and cubed, optional

Instructions

  1. In a stockpot, fry the onions and garlic.

  2. Add all the rest of the ingredients except the sweet potato cubes, plus enough water to cover.

  3. Boil until everything is soft.

  4. Blend until smooth.

  5. Add the cooked sweet potato cubes before serving if desired. Enjoy!
