Ingredients
- 2tspextra virgin olive oil
- 2clovesgarlic,chopped
- 2tbsponion,diced
- 3cupsbroccoli
- 8ozbaby spinach leaves
- 2parsnips,peeled, cored, and chopped
- 2celery ribs,trimmed and chopped
- 1handful fresh parsley,roughly chopped
- sea salt and freshly ground black pepper,to taste
- 1tbsplime juice,or to taste
- 2tbspdry lentils,or other plant-based protein
- ½cupsweet potato,cooked and cubed, optional
Instructions

In a stockpot, fry the onions and garlic.

Add all the rest of the ingredients except the sweet potato cubes, plus enough water to cover.

Boil until everything is soft.
