Ingredients

  • 2 lbs of fresh clams
  • 2 tbsp of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups of diced tomatoes
  • 2 cups of vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Scrub and rinse the clams thoroughly.

  2. Heat the olive oil in a large pot and sauté the onion and garlic until fragrant.

  3. Add the diced tomatoes and vegetable broth and bring to a boil.

  4. Add the clams and simmer for 10-15 minutes or until they open.

  5. Remove the opened clams from the pot and set aside.

  6. Add the heavy cream to the pot and simmer for another 10 minutes.

  7. Season with salt and pepper to taste.

  8. Serve the soup with the opened clams and garnish with fresh parsley.
