Ingredients

  • 2tspolive oil
  • 6-7scallions,chopped
  • 2garlic cloves,minced
  • 1tomato,diced
  • 1tspcumin
  • ½tsphomemade sazon
  • ½lbbeef,cubed into small bite size pieces
  • 5cupswater
  • Beef bullion
  • 1carrot,peeled and sliced
  • 2tbspyellow bell pepper,diced
  • 2mediumpotatoes,peeled and cubed
  • 1cupquinoa,cooked
  • 6tbspcilantro,fresh chopped
  • Salt and pepper,to taste

Instructions

  1. Saute oil in a large pot. Add scallions and garlic and sauté for 3 minutes until soft over medium heat.

  2. Add tomato, cumin, sazon with achiote, ¼ cup cilantro, and cook for another 2 minutes.

  3. Add beef, water, bullion, carrot, bell pepper, salt and bring to a boil.

  4. Cover and simmer on low for about 1½ hours, until meat is tender.

  5. Add potato and cooked quinoa; cook for about 25 minutes.

  6. Add remaining chopped cilantro and serve.

  7. If using a pressure cooker, cook soup with meat for 45 minutes. Add potato and quinoa, and cook for 10 minutes more.
