Bean and Noodle Soup Recipe

When there’s a snowstorm or a downpour outside your window, try making a bowl of this filling soup. Not only will it fill you up but it will keep you feeling warm and cozy inside.

How To Make Bean and Noodle Soup

  • 1 cup red beans
  • 2 tbsp olive oil
  • 1 onion (large, chopped)
  • 1/8 tsp cinnamon
  • 1/2 lb fresh pork rind
  • 1 ham bone
  • 1/8 lb salt pork (chopped)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 6 cups water
  • 1 ½ cup noodles
  • 2 tbsp parmesan cheese (grated )
  1. Put all ingredients except for noodles and cheese in a soup pan.

  2. Cover tightly and boil gently for 2 ½ hours.

  3. Add noodles and cook for 8 more minutes.

  4. Sprinkle with cheese and serve.
