Ingredients

  • 1cupwhite rice,uncooked
  • 2cupswater
  • ½cupfrozen green peas
  • 1tbspbutter
  • 2tbsponion,diced
  • lbcrab meat
  • 2ozgreen bell pepper,diced
  • cupchicken broth
  • cup1% milk
  • cupfat-free Parmesan cheese,grated

Instructions

  1. In a saucepan, bring water to a boil. Add rice and frozen peas then stir.

  2. Reduce heat, then cover and simmer for 20 minutes.

  3. In a medium skillet, melt butter and add the diced onion and minced garlic. Saute until onions are transparent.

  4. Add crab to the mixture and saute briefly. Stir in bell peppers chicken broth, milk, and parmesan. Bring to a boil then turn off the heat.

  5. Serve over rice when done, and enjoy!
