Ingredients

  • 4 slices of whole-grain bread
  • 2 boneless, skinless chicken breasts
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1/2 cup arugula
  • 1/4 cup sliced red onion
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F.

  2. Season the chicken breasts with salt, pepper, and garlic powder.

  3. Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side.

  4. Transfer the chicken to a baking sheet and brush with balsamic vinegar and honey.

  5. Bake the chicken in the oven for 10-12 minutes, or until the internal temperature reaches 165°F.

  6. Toast the bread slices until lightly crisped.

  7. Assemble the sandwiches by topping each slice of bread with arugula, sliced red onion, cherry tomatoes, and crumbled feta cheese.
