Ingredients

For the Shrimp:

  • 16ozjumbo shrimp
  • salt and pepper,to taste
  • ¼cupegg substitute,egg beaters
  • 6tbspwhole wheat Italian seasoned breadcrumbs
  • 2tbsppanko
  • 2tbspparmesan cheese,grated
  • Cooking spray

For the Sandwich:

  • ½cupmarinara,or your favorite tomato sauce
  • 4ozshredded part skim mozzarella cheese,1 cup
  • 12ozFrench bread,sliced into 4 pieces

Instructions

  1. Follow cooking directions for the baked shrimp recipe.

  2. Preheat oven to 425 degrees F or set your broiler to low.

  3. When shrimp is cooked, divide shrimp equally between 4 pieces of bread. Scoop out the inside of the bread.

  4. Top each sandwich with 2 tablespoon of sauce and shredded mozzarella cheese.

  5. Place sandwiches on a cookie sheet and heat in the oven or broiler until the cheese melts; 2 to 3 minutes, careful not to burn if using the broiler.
