Ingredients
- 2 lbs snapper, tails removed
- seafood seasoning
- salt
- pepper
- 2 cups all-purpose flour
- ¼ cup cornmeal
- 2 tsp baking powder
- 1 large egg, beaten
- vegetable oil
- Hamburger buns
- mayonnaise
- lettuce
- 1 red onion, thinly cut
- American cheese
Instructions
- Heat oven to 375°F and fill a Dutch oven halfway with vegetable oil.
- Cut fish into strips or a burger like shape, sprinkle with seasoning, salt, and pepper.
- Combine flour, cornmeal, baking powder, remaining 1 tsp. seasoning, 1/2 tsp. salt, and 1/2 tsp. pepper; stir well.
- Add the egg, stirring until thoroughly blended and smooth.
- Dip fish strips into batter, coating both sides well.
- Shake off excess.
- Fry fish, in batches, 2 minutes on each side or until golden, then drain.
- When done, add all ingredients on bun and enjoy!
