Ingredients

  • 4 oz cream cheese, softened
  • ½ cup Greek yogurt
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup Colby-Jack cheese, shredded
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp ground black pepper
  • 6 tbsp butter, softened
  • 12 slices white bread

Instructions

  1. In a medium mixing bowl, use an electric mixer to beat together the Greek yogurt and cream cheese until fluffy.

  2. Stir in the cheddar, mozzarella, Colby-Jack, garlic powder, salt, and pepper.

  3. Spread a dab of butter across one side of each bread slice.

  4. Place 6 bread slices buttered-side-down onto a clean work surface.

  5. Spread each slice with about ½ cup of the cheese mixture.

  6. Press the remaining 6 slices of bread atop the cheese filling, buttered-side-up.

  7. Warm a large skillet over medium-high heat.

  8. Place the sandwiches in the skillet and grill each side for 2 to 3 minutes until the bread turns golden-brown and the cheeses are fully melted, working in batches if necessary.

  9. Slice each sandwich in half diagonally before serving.
