Ingredients

  • Extra virgin olive oil, as needed for frying
  • 2 chicken breasts, boneless and skinless
  • 2 eggs
  • ½ cup almond milk
  • 1/2 cup wheat flour
  • ¼ tsp baking soda
  • 1 tsp mustard

Instructions

  1. Pour olive oil in a pan over high heat.
  2. Combine egg and milk in a large bowl. Whisk together well.

  3. Combine flour, baking soda, and mustard in another bowl. Mix thoroughly.

  4. Dip chicken breasts first in the egg mixture then in the flour mixture.

  5. Fry the chicken in the hot oil for about 5 minutes or until browned. Drain on paper towels.
