How To Make Tomato-Potato Salad with Basil

Toss a flavorful side dish in this tomato-potato salad made with grilled red potatoes, ripe tomatoes, and fresh basil, coated in tangy balsamic vinegar.

  • 4red potatoes
  • extra virgin olive oil
  • salt and freshly ground pepper,to taste
  • 2large ripe tomatoes
  • 16fresh basil leaves
  • balsamic vinegar


  1. Brush potato slices lightly with oil and sprinkle with salt and pepper.

  2. Place on a medium-hot grill and cook, covered, for 3 to 5 minutes on each side, or until tender.

  3. Slice tomatoes and arrange on plates along with potatoes, tucking basil leaves among them.

  4. Drizzle with vinegar and additional oil, and sprinkle with salt and pepper to taste.
