How To Make Spinach-and-Turkey Salad with Cucumber-and-Feta Dressing
This refreshing turkey salad is tossed with tomatoes and spinach in a smooth and creamy yogurt dressing made with pureed cucumber and feta.

Ingredients
- 1cucumber
- plain yogurt
- ¼cupolive oil
- 1tbspwine vinegar,red or white
- 2tbspfresh dill,chopped
- ½tspsalt
- ¼tspfresh ground black pepper
- ¼lbfeta cheese
- 1½lbsspinach
- 1½lbspiece cooked turkey
- 2cupsquartered cherry tomatoes,(about ¾ lbs)
Instructions

In a blender or food processor, combine 1 cucumber half, the yogurt, oil, vinegar, dill, ¼ teaspoon of salt, and pepper. Blend or process until smooth.

Chop the remaining cucumber and add to the blender or food processor along with the feta. Pulse once or twice just to combine.

In a large glass or stainless-steel bowl, combine the spinach, turkey, tomatoes, and the remaining ¼ teaspoon salt.

Toss the salad with the dressing.
