The fresh fruitiness of the apple and pineapples gives a nice contrast to the savory ham in this delicious pasta salad with horseradish and salad greens.

Ingredients

  • 2cupsfarfalle bow tie pasta
  • 2cupsham,cooked, cubed
  • 2apples,cored, sliced with peel
  • 1cuppineapple preserves
  • 1cupapple jelly
  • ½cuphorseradish,prepared
  • tspdry mustard
  • 1tspground black pepper
  • 8ozmixed salad greens

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 8 to 10 minutes or until al dente; drain and run under cold water. Transfer to a large bowl with ham and apples and set aside.

  2. In a small bowl, whisk together the preserves, apple jelly, horseradish, mustard and black pepper. Pour over the ham/pasta mixture and toss to combine.

  3. Cover and refrigerate salad for 30 minutes.

  4. Place the mixed salad greens on 4 plates and arrange ham salad on top.

  5. Serve and enjoy!
