How To Make Reuben Pasta Salad

Enjoy a hearty bowl of Rueben pasta salad for lunch today! It’s loaded with tasteful corned beef, tangy sauerkraut and more for a filling meal.

  • 3cupsmedium pasta,uncooked
  • ¼cupwhite onion,minced
  • 1cupsauerkraut,drained
  • ½cupdill pickles,chopped
  • 1cupcorned beef,sliced or cubed
  • 1cupswiss cheese,cubed

For Dressing:

  • cupmayonnaise
  • cupsour cream
  • cupthousand island dressing,or russian dressing
  • tbspdijon mustard
  • 3tbspsauerkraut brine
  • tspcaraway seeds
  • salt and pepper,to taste


  1. Cook the pasta according to package directions.

  2. Drain the pasta, then run them under cold water.


  1. Combine the mayonnaise, sour cream, thousand island dressing, mustard, brine, caraway seeds, salt, and pepper in a small bowl.

  2. Toss the pasta, onion, sauerkraut, dill pickles, corned beef, and swiss cheese with the dressing.

  3. Refrigerate for 1 hour.

  4. Drizzle with extra thousand island dressing, if desired.

  5. Serve, and enjoy!
