Ingredients

  • 1lbstrawberries
  • 6cupslettuce leaveswashed
  • ¾cupquinoacooked
  • ¼cupdried cranberries
  • 3green onions
  • cuppistachiosroasted
  • cupfeta cheesecrumbled

For Dressing:

  • ¼cupcider vinegar
  • 3tbspmaple syrup
  • 2tbspdijon mustard
  • ½tspfresh basilchopped
  • ¼tspgarlic powder
  • ½tspsalt
  • ½tsppepper
  • ½cupvegetable oil

Instructions

Dressing:

  1. Combine the cider vinegar, maple syrup, mustard, basil, garlic powder, salt, pepper, and oil in a jar with a tight fitting lid.

  2. Shake well and refrigerate.

Assemble Salad:

  1. Add the strawberries, lettuce, quinoa, cranberries, green onions, pistachios, and feta cheese to a large bowl.

  2. Drizzle with dressing and toss well.

  3. Serve, and enjoy!
