This chicken salad is bursting with grapes and pineapples all coated in a curry-seasoned sour cream dressing. Whip up a batch in just 15 minutes!

Ingredients

  • 3cupschicken,diced
  • 1cuppineapple tidbits,drained, juice reserved for dressing
  • 1cupred grapes,halved
  • 1red bell pepper,diced
  • 1cupcelery,sliced
  • ¾cuppecans,chopped

For Dressing:

  • cupmayonnaise
  • cupsour cream
  • 1tspcurry powder
  • 3tbsppineapple juice,from the tidbits
  • tspdijon mustard
  • salt and pepper,to taste

Instructions

  1. Combine the mayonnaise, sour cream, curry powder, pineapple juice, mustard, salt, and pepper in a small bowl. Set aside.

  2. Add the chicken, pineapple, grapes, bell pepper, celery and pecans to a large bowl. Top with the prepared dressing, then gently toss to combine.

  3. Serve over croissants or lettuce, and enjoy!
