How To Make Pear and Beet Salad

This beet salad has the fresh crispness of pears, nutritious spinach, and walnuts tossed together with honey vinaigrette for a light and healthy meal!

Ingredients

  • 2cupsbeets,roasted
  • 4cupsspinach and arugula mix
  • 2pears,sliced
  • ¼cupfeta cheese
  • ¼cupwalnuts,chopped

For Honey Vinaigrette Dressing:

  • ¼cupolive oil
  • 2tbspapple cider vinegar
  • 1tbsphoney
  • salt and pepper

Instructions

  1. In a large bowl add the roasted beets, spinach, pears, feta cheese and walnuts.

Honey Vinaigrette Dressing:

  1. In a small bowl whisk together the olive oil, apple cider vinegar, honey and salt and pepper.

  2. Drizzle desired amount of dressing on salad and toss together until coated.

  3. Serve and enjoy!
