Ingredients

For Pizza Pasta Salad:

  • 1lbpasta
  • 8ozmozzarelladiced
  • 1cupRoma tomatoesdiced
  • 6cupspizza toppingschopped
  • 1batchGarlic-Oregano Vinaigrettesee below

Optional toppings:

  • Parmesan cheesefreshly-grated
  • red pepper flakescrushed

For Garlic-Oregano Vinaigrette:

  • cupextra-virgin olive oil
  • ¼cupwhite wine vinegar
  • 3garlic clovespeeled and pressed or minced
  • ½tspdried oregano
  • ½tspkosher salt
  • ½tspblack pepper

Instructions

Pizza Pasta Salad:

  1. Cook the pasta in a large stockpot of generously-salted water al dente according to package directions.

  2. Drain pasta and rinse under cold water for about 20 to 30 seconds until no longer hot.

  3. In a large bowl, combine the cooled pasta, mozzarella, tomatoes, and pizza toppings.

  4. Drizzle the vinaigrette on top, then toss to combine. Garnish with desired toppings.

  5. Serve immediately, or cover and refrigerate for up to 3 days.

Garlic Oregano Vinaigrette:
