This vegan-friendly Mediterranean Salad is packed with crisp cucumber, olives, and meatless chicken strips, to yield a filling and healthier meal!

  • 1cupolive oil
  • 1cupred wine vinegar
  • 2tbsphoney
  • 2tspdried oregano leaves
  • 1tbspdijon mustard
  • ¼tspground red pepper
  • 2garlic clove
  • 1pkgMorningstar Farms® Meal Starters™ Chik’n Strips
  • 4ozfirm tofu
  • cupstomato,(about 2 medium tomatoes), chopped
  • 1cupcucumber,seeded and sliced
  • 1cupgarbanzo beans,canned
  • ½cupblack olives,pitted
  • ½cupred onion,chopped
  • 1cupfresh parsley,chopped
  • 4cupstorn mixed greens


  1. In small bowl whisk together oil, vinegar, honey, oregano, mustard, red pepper, and garlic. Set aside.

  2. Cook the Morningstar Farms® Meal Starters™ Chik’n Strips according to package directions.

  3. In large bowl toss together tofu, tomato, cucumber, beans, olives, onions, and parsley.

To Assemble:

  1. Arrange the greens on 4 serving plates. Top with tofu mixture. Sprinkle with Chik’n Strips.

  2. Whisk the oil mixture. Drizzle over each salad.

  3. Serve immediately, and enjoy!
