How To Make Kale Pasta Salad

Summers are for light dishes like this kale pasta salad. It brings together the freshest ingredients tossed in a parmesan vinaigrette.

  • 3cupspenne,uncooked
  • 8ozsalami,diced
  • 1cuplittle tomatoes,grape, cherry, etc, halved
  • ½yellow bell pepper,chopped
  • 2cupskale,packed, stems removed and chopped finely
  • ¼cupred onion,or to taste
  • salt & pepper,to taste

For Dressing:

  • ¼cupparmesan cheese,finely grated
  • 2tbspred wine vinegar
  • 3tbspolive oil
  • 1clovegarlic,minced
  • ¼tspItalian seasoning
  • 1tspbrown sugar,packed


  1. Boil a large, salted pot of water for the pasta. Cook the pasta al dente according to package instructions. Once the pasta is done, rinse it under cool water and let it drain thoroughly.

  2. Meanwhile, prep the other ingredients and add them to a large salad bowl. The kale should be removed from the stems and chopped very finely. Add the dressing ingredients to a jar.

  3. Once the pasta is done, add it to the bowl. Shake the dressing thoroughly and toss the salad until coated. Season the pasta salad with salt & pepper as needed.
