How To Make Italian Antipasto Pasta Salad

Tossed with a creamy Italian dressing made with white wine vinegar, olive oil, parmesan cheese, and more, our antipasto pasta salad will be a new favorite.

Ingredients

  • ½cupextra-virgin olive oil
  • ¼cupwhite wine vinegar
  • ¼cupmayonnaise
  • 1tbsplemon juice
  • ¾cupparmesan cheese,shredded
  • ¼tspgarlic salt
  • ¼tspdried basil
  • ¼tspdried oregano
  • ¼tspmarjoram
  • 1lbrotini pasta,tricolor
  • ½lbsalami,thickly sliced
  • 8ozmozzarella cheese,diced
  • 2vine tomatoes
  • 8ozmediumblack olives,pitted
  • 1green bell pepper,thinly sliced
  • 4ozartichokes,sliced into ½-inch pieces

Instructions

  1. Mix the olive oil, white wine vinegar, mayonnaise, lemon juice, parmesan cheese, garlic salt, dried basil, dried oregano, and dried marjoram together in a small bowl, and whisk until well combined.

  2. In a large bowl add the pasta, salami, mozzarella cheese, tomatoes, black olives, green bell pepper, and artichokes.

  3. Add the dressing and toss gently.
