  • ½shallot
  • 2tbspred wine vinegar
  • ¼cupextra virgin olive oil
  • salt and freshly ground pepper
  • 1bagMesclun greens
  • ½bulbfennel
  • ½cucumber,seedless
  • ½red bell pepper
  • ¼red onion
  • 1avocado
  • 2ozfresh goat cheese,crumbled
  • ¼cupshelled pistachios,roasted

Instructions

  1. In a large bowl, whisk the chopped shallot with the red wine vinegar and olive oil.

  2. Season with salt and pepper.

  3. Add the mesclun greens, fennel, cucumber, bell pepper, and onion, then toss.

  4. Add the avocado slices and crumbled goat cheese, season with salt and pepper, and gently toss the salad again.

  5. Sprinkle the pistachios on the salad and serve right away.
