Pepperonis add a bite of peppery flavors to compliment the tangy olives, fresh cucumbers, and briny feta in this no-fuss Greek salad recipe!

Ingredients

  • ¼lbpepperoni,thin sliced
  • ¼cuplemon juice,(from about 1 lemon)
  • 1tspdried oregano
  • ¾tspsalt
  • ¼tspfresh ground black pepper
  • ½cupolive oil
  • 1large romaine lettuce head
  • 1english cucumber
  • 3tomatoes
  • 1red onion
  • 1green bell pepper
  • ¾cupkalamata olives
  • 8ozfeta

Instructions

  1. In a large frying pan, cook the pepperoni over moderate heat, stirring occasionally, for about 3 minutes until lightly browned. Drain.

  2. In a large glass or stainless-steel bowl, whisk the lemon juice, oregano, salt, and black pepper. Add the oil slowly, whisking.

  3. Add the lettuce, cucumber, tomatoes, onion, bell pepper, olives, cheese, and pepperoni and toss to coat.

  4. Serve and enjoy!
