How To Make Greek Rainbow Vegetable Salad

Just like a rainbow, this healthy vegetable salad is made vibrant combinations of vine tomatoes, cucumber, and bell peppers, then topped with feta cheese!

Serves:

Ingredients

  • 4medium tomatoes,on-the-vine
  • 1large cucumber,peeled
  • ½red onion
  • 1red bell pepper
  • 1yellow bell pepper
  • 4ozfeta cheese,such as Bulgarian Feta, or any kind
  • 3ozkalamata olives
  • ¼cupolive oil
  • ¼cupred wine vinegar
  • 1tsphoney
  • ¼tspkosher salt
  • ¼tspblack pepper

Instructions

  1. Chop the tomatoes, cucumber, onion, and bell peppers into ½-inch cubes.

  2. Chop the olives. Crumble the feta cheese.

  3. Mix the olive oil, red wine vinegar, honey, salt, and pepper together in a small bowl.

To Assemble:

  1. Layer in the following order: red onions, cucumbers, yellow bell pepper, red bell pepper, tomatoes, feta cheese, and olives.

  2. Pour the dressing over the salad. Let sit for about 30 minutes.

  3. Serve and enjoy!
