Fruity Curry Chicken Salad Recipe

Textures are all mixed up along with flavors of raisins, red grapes, apples, celery, and pecans in this curry chicken salad recipe. This would go great on a croissant or in a honey pita.


This recipe will give a fruity twist to your chicken salad. It is healthy and tasty and perfect to pair with a croissant or honey pita. You can also make it healthier by using a non fat mayonnaise.

Ingredients

  • 4 boneless skinless chicken breast halves , cooked and diced
  • 1 stalk celery, diced
  • 4 green onions, chopped
  • 1 Golden Delicious apple , cored and diced
  • cup golden raisins
  • cup seedless green grapes, halved
  • ½ cup pecans, chopped, toasted
  • tsp ground black pepper
  • ½ tsp curry powder
  • ¾ cup light mayonnaise

Instructions

  1. In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder, and mayonnaise. Mix all together.

  2. It is better served if you wait a day so all the flavors can mix together.
