How To Make Frog Eye Salad (Acini de Pepe Salad)

It may not sound like it, but frog eye salad is actually a sweet and fluffy dessert with pineapple, oranges, egg, Cool Whip, and marshmallows.

Serves:

Ingredients

  • 1cupwhite sugar
  • 2tbspflour
  • 2tspsalt
  • cupsunsweetened pineapple juice
  • 2eggs,beaten
  • 1tbsplemon juice
  • 1lbAcini Di Pepe pasta
  • 2cupsmandarin oranges,canned, drained well
  • 20ozpineapple,crushed, drained well
  • 8ozcool whip
  • 1cupminiature marshmallows

Instructions

  1. In a large pot whisk together the sugar, flour, salt, pineapple juice and eggs on medium heat until thickened then turn off the heat and whisk in the lemon juice.

  2. Cook the acini de pepe pasta one minute shy of the directions then drain and rinse well before adding to the pineapple egg mixture and mixing it together.

  3. Refrigerate the pasta mixture until fully chilled and just before serving mix with the oranges, pineapple, cool whip and marshmallows.
