How To Make Crunchy Asian Lime-Peanut Slaw
In just 15 minutes, you can whip up this tasty Asian lime-peanut slaw made with fresh carrots, cucumber, and bell peppers topped with honey roasted nuts!

Ingredients
- 1½cupsEnglish cucumber
- 1red bell pepper
- 1green bell pepper
- 2carrots
- ½cupcilantro leaves
- 1bunchscallions,thinly sliced on a bias
- 3limes
- 3tbsppeanut butter
- 2tspginger,freshly grated
- 2tbsprice wine vinegar
- 1tbspcanola oil
- 1pinchchili flakes
- ¼cuphoney roasted peanuts,roughly chopped, plus more to garnish
- kosher salt and freshly ground black pepper
- 1tbspsesame oil

In a large bowl, whisk together the juice of 3 limes, peanut butter, grated ginger, rice wine vinegar, 1 tablespoon of sesame oil, and canola oil. Season to taste with chili flakes, salt, and pepper.

Peel the carrots and cucumbers. Using a spiralizer, make noodles out of the cucumber, carrots, and bell peppers.

Add the prepared cucumbers, red bell peppers, carrots, cilantro, scallions, and peanuts to the large bowl with the dressing. Toss everything well.
