How To Make California Raisin Chicken Salad

A chicken salad arranged with sliced chicken breasts, California raisins, mixed greens, snow peas, mushrooms, red onions and cherry tomatoes.

Dressing:

  • ¾ cup vegetable oil
  • ¼ cup white wine vinegar
  • 3 tbsp Dijon-style mustard
  • ¼ cup onion (finely chopped )
  • 1 tbsp dried chives
  • ½ cup California raisins

Salad:

  • 6 chicken breasts (sliced, cooked, skinless )
  • ½ cup California raisins
  • 8 oz. mixed field greens
  • 1 ½ cups snow peas (trimmed, blanched)
  • 1 small red onion (sliced, separated into rings)
  • 1 cup mushrooms (sliced )
  • 1 cup cherry tomatoes (halved )
  1. Whisk together dressing ingredients in small bowl.
  2. Add salt to taste.
  3. Arrange field greens on individual salad.
  4. Top with sliced chicken, peas, onions, mushrooms and tomatoes.
  5. Spoon on salad dressing just before serving.

Ingredients
