Ingredients
Dressing:
- ¾ cup vegetable oil
- ¼ cup white wine vinegar
- 3 tbsp Dijon-style mustard
- ¼ cup onion, finely chopped
- 1 tbsp dried chives
- ½ cup California raisins
Salad:
- 6 chicken breasts, sliced, cooked, skinless
- ½ cup California raisins
- 8 oz. mixed field greens
- 1 ½ cups snow peas, trimmed, blanched
- 1 small red onion, sliced, separated into rings
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes, halved
Instructions
- Whisk together dressing ingredients in small bowl.
- Add salt to taste.
- Arrange field greens on individual salad.
- Top with sliced chicken, peas, onions, mushrooms and tomatoes.
