How To Make Caesar Salad with Shrimp
You can never go wrong with this filling Caesar salad assembled with lettuce, cherry tomatoes, croutons, and shrimp tossed in a rich and zesty dressing!
Serves:
Ingredients
- 10ozsourdough,(1 loaf) or country style bread
- ¾cupolive oil,plus an additional 2 tbsp
- 4tbsplemon juice
- 2clovesgarlic
- ½cupparmesan,grated
- 1tspanchovy paste
- 2tspdijon mustard
- 1tspsalt
- ½tspfresh ground black pepper
- 1lbmedium shrimp
- 1headromaine lettuce
- 2cupscherry tomatoes,halved
Instructions

Heat the oven to 325 degrees F.

Toss the bread cubes with 1 tablespoon of oil and spread on a large baking sheet.

Bake for about 15 minutes until crisp on the outside and lightly browned.

Let cool.

Meanwhile, put the lemon juice, garlic, parmesan, anchovy paste, mustard, ½ teaspoon of salt, and ¼ teaspoon of pepper in a blender, and blend until smooth

With the blender running, slowly add the ¾ cup of oil.

Alternatively, whisk together everything but the oil and then add the oil slowly, still whisking.

Heat the broiler.

In a broiler pan or on a baking sheet, toss the shrimp with the remaining 1 tablespoon of oil, ½ teaspoon of salt, and ¼ teaspoon of pepper.

Broil the shrimp, turning once, for about 4 minutes in all, until just done.

In a large bowl, combine the lettuce, tomatoes, croutons, and shrimp.

Add the dressing, and toss to coat.
