- 8tbspolive oil
- ½lbsourdough baguette
- ¾tspsalt
- ¾tspfresh ground black pepper
- 4garlic clove
- 1tbspcooking oil
- ¾lbshiitake mushrooms
- ½cupfresh parsley,chopped
- 2eggs,hard cooked
- 3tbspwine vinegar
- 2small romaine lettuce heads,(about 1 lb each)
- ¼cupparmesan,grated
Instructions

Put the eggs, vinegar, remaining garlic, ¼ teaspoon of pepper, and 5 tablespoons of olive oil in a blender or food processor and whir until smooth.

Add the lettuce to the mushrooms and croutons in a bowl, sprinkle with Parmesan, and then add the dressing. Toss to coat.
