  • 8tbspolive oil
  • ½lbsourdough baguette
  • ¾tspsalt
  • ¾tspfresh ground black pepper
  • 4garlic clove
  • 1tbspcooking oil
  • ¾lbshiitake mushrooms
  • ½cupfresh parsley,chopped
  • 2eggs,hard cooked
  • 3tbspwine vinegar
  • 2small romaine lettuce heads,(about 1 lb each)
  • ¼cupparmesan,grated


  1. Put the eggs, vinegar, remaining garlic, ¼ teaspoon of pepper, and 5 tablespoons of olive oil in a blender or food processor and whir until smooth.

  2. Add the lettuce to the mushrooms and croutons in a bowl, sprinkle with Parmesan, and then add the dressing. Toss to coat.

  3. Serve and enjoy!
