This feta salad is packed with vibrant bell peppers and juicy tomatoes, and tossed in a tangy and sweet dressing, for a more flavorful bite!

Ingredients

  • 3tomatoes,cored, chopped
  • 1red bell pepper,cored, sliced
  • 1yellow bell pepper,cored, sliced
  • 1green bell pepper,cored, sliced
  • ½onion,thinly sliced
  • 3ozfeta cheese,crumbled, or to taste

For Dressing:

  • 4tbspcanola oil
  • 2tbspred wine vinegar
  • 1tspsalt
  • ½tspwhite sugar
  • 1pinchfreshly ground black pepper,to taste

Instructions

  1. Combine the tomatoes, all bell peppers, and onion in a large bowl. Crumble the feta cheese on top.

  2. Stir together the oil, vinegar, salt, sugar, and black pepper in a cup.

  3. Pour the dressing over the salad, then toss to combine.

  4. Serve and enjoy!
